Written by Firefighter Rip Esselstyn with the Austin Fire Department in Texas. Esselstyn is a long-time triathlete, and was an All-American Swimmer at the University of Texas. The American diet is one of the most unhealthy diets in the developed world, and our current health crises (rampant heart disease, obesity, resultant strokes and heart attacks) are living - and killing - proof. As a vegetarian for just over 7 years, and now a vegan of 3 months, I've often been the target of some good-natured ribbing (and some not-so-good-natured) by the guys and gals in my department for not partaking in the communal barbeques or other station meals involving meat. Many have expressed concern over a vegetarian's ability to keep up with the meat-eaters in this profession. It is exceedingly refreshing and inspiring to see the quintessential poster child for strength, fortitude, and heroism - the firefighter - also taking on the role of health and dietary leader as a vegetarian. This is sure to turn a few heads, and cause America to look up and take notice.
